Breakfast: Red Pepper & Mushroom Stuffed Omelet
For: Adult and Teen Inflammatory Acne
This recipe is rich in Omega-3’s which are an anti-inflammatory for the skin and body. One common cause of acne is inflammation systemically. An Omega-3 supplement is highly recommended at therapeutic doses in addition to eating anti-inflammatory foods.
1 clove garlic, crushed and minced
½ onion, diced
1 T canola oil*
½ c. thinly sliced cremini (brown) mushrooms
½ sweet red pepper, finely diced
½ t. salt
2 omega-3 eggs
2 T. vanilla rice milk (eg, Rice Dream)
½ t. salt
Pinch of pepper
¼ c. finely chopped fresh, flat parsley leaves
1 T. canola oil
1.       In a skillet, sauté garlic and half the diced onion in 1 T. canola oil for 1-2 minutes over medium heat.
2.       Add mushrooms, half the diced sweet red pepper, and ½ t. salt. Saute until vegetable are tender, about 3 minutes. Remove the mixture from the pan. Cover and keep warm.
3.       In a small bowl, beat together eggs, milk, salt and pepper. Add the parsley leaves, remaining onions and remaining diced sweet red peppers to the egg mixture.
4.       Heat 1 T. canola oil in a skillet over medium-high heat and pour the egg mixture into the skillet. Reduce heat to medium-low, cover and cook until eggs are set, about 4 minutes.
5.       When eggs are cooked through, top with reserved mushroom-red pepper mixture on one half of the omelet. Fold omelet in half and slide from skillet to plate.
*Why canola oil? Of the cooking oils, it is one of the highest in Omega-3 content which is an amazing anti-inflammatory
